Ingredients:
2 cups water
1 cup organic brown rice
1/4 cup diced red onion - uncooked
1/2 cup diced celery including the leaves
1/2 cup balsamic vinaigrette salad dressing (See below)
A desert spoon of organic Honey
DIRECTIONS:
Boil the water.
Stir in the rice, cover, and reduce heat to low.
Simmer for about 40 minutes, or until done.
Place the rice to a serving bowl, and stir in onion, celery,
and salad dressing.
This dish is best refrigerated, and serve cold with fresh
coriander leaf and stalk sprinkled on before serving.
The Dressing
Olive oil
Organic balsamic vinegar, or lemon juice
Freshly milled black pepper.
A little clear honey to taste
Mix well to taste.
