Ingredients
1 tbsp olive oil
1 banana shallot, chopped
1 garlic clove, chopped
1/4 bunch fresh coriander
1 tsp ground cumin
110g/4oz chickpeas
85g/3oz dried apricots, chopped
Method
1. Heat the oil in a medium saucepan. Add the shallot and garlic and sauté for
2 minutes.
2. Add the spices and stir well.
3. Add the chickpeas and apricots and cook on a low heat for 3
minutes.
4. If it appears too dry add a little hot water or stock.
5. Remove from the heat and ladle into a shallow bowl. Serve with
couscous.
6. Sprinkle with fresh coriander
