Avocado and Lemon Soup

One cup of water

Flesh of one and a half avocado, reserving half of one for a garnish

Two cups of chopped cucumber

One and a half cups of plum tomatoes chopped

1 large clove crushed garlic

1 sprig mint or basil leaves finely chopped.

Juice of 2 unwaxed lemons.

A pinch of vegetable bullion.

A teaspoon organic clear honey or more to taste

2 small additional basil or mint leaves.

 

Directions

1.Combine all ingredients in a blender in the order listed.

2. Start blender on low speed for a few seconds, then switch to high.

3. Blend until smooth, about 1 -2 minutes

4.Pour into 2 soup bowls.

5. Dice reserved avocado and gently place them into the centre of the bowl.

6. Add basil or mint leaf if desired.
